La Casa de la Seda, Organic Wine, Utiel-Requena, Red
ORIGIN:
Grapes from the central Penedès area, on the threshold of the upper Penedès. The vineyard has clay loam soil, characteristic of this region, located on a small plateau at about 300 meters above sea level, where morning and afternoon breezes are always present.
VINIFICATION:
The must is obtained from a very gentle pressing to protect the finesse and floral aromas of Malvasia. Partial fermentation occurs in stainless steel vats and in large egg-shaped clay jars to achieve maximum complexity. Subsequent aging in these vats on its own lees for several months provides richness and volume on the palate.

Alcohol 12% vol – Acidity (ATS): 3.3 g/l – Sugar: 0.18 g/l – pH: 3.14
SERVING SUGGESTIONS:
Thanks to its acidity and freshness, this wine is very versatile. It pairs perfectly with any fish or seafood dish, cheeses, and dishes with high-fat or creamy sauces. It also complements rich meats such as duck or pork, as well as dishes with tomato-based sofrito. It pairs well with sausage with bread and tomato, pizzas, pasta, or can be enjoyed on its own.
TASTING NOTES:
Clear, pale lemon-colored wine with elegant legs. On the nose, clean and medium-high intensity, showing aromas of green fruit (grape), citrus (lime), floral (acacia), herbaceous (lavender), and yeast (from aging on lees), with a subtle mineral touch (flint). Dry on the palate, with refreshing acidity, balanced alcohol, creamy and elegant, with a long finish. Suitable for drinking now but also has potential for some aging.
