Eòlic Pinot Noir, Penedès, Rose
ORIGIN:
Grapes from the highlands of Penedès, in the town of Pontons, over 795 meters above sea level. The land consists of clay loam soil, characteristic of the upper Penedès area. Combined with the Mediterranean climate, moderate rainfall, and cooling winds, this provides optimal conditions for producing excellent white wines.
VINIFICATION:
The juice is obtained directly through a gentle pressing of whole grapes to produce a must with low phenolic content, maintaining freshness and subtlety once fermented. Oxygen is kept at bay from the beginning to ensure long-lasting youthfulness.

SERVING SUGGESTIONS:
The flavor profile of a directly pressed Rosé is similar to that of a white wine, giving Eòlic Rosé a wide range of food pairings. It goes well with classic cured meats, all kinds of pasta, pizza, fish, seafood, and white meat. True to its Mediterranean origins, it also pairs beautifully with Mediterranean cuisine. On its own, it is very refreshing.
TASTING NOTES:
Fresh, elegant, and subtle, this wine has a pale color and a bright nose that reveals aromas of red fruits such as cherry and strawberry, along with black fruits like cassis, influenced by the limestone soils. It also features floral notes like rose and hints of anise, characteristic of the Mediterranean climate, giving it a unique character. The finish is long and lingering, with balanced acidity.
