ORIGIN:

Grapes from the highlands of Penedès, in the town of Pontons, over 795 meters above sea level. The land consists of clay loam soil, characteristic of the upper Penedès area, which, along with the Mediterranean climate, moderate rainfall, and cooling winds, provides optimal conditions for producing good white wine.

VINIFICATION:

The grape must is made in the absence of oxygen, with a very gentle pressing to protect the finesse and aromas that characterize this variety throughout its life. It is aged on its fine lees for about 2 months, depending on tasting, to reach the optimal balance between finesse on the nose and palate.

Alcohol 12.5% vol – Acidity (ATS): 3.5 g/l – Sugar: 0.49 g/l – pH: 3.09

SERVING SUGGESTIONS:

Ideal with all kinds of seafood or related dishes, such as pasta with seafood. Also pairs perfectly with other pasta dishes or pizzas. Curry dishes are a good choice for wines with tropical fruit notes like this Sauvignon. Its acidity makes it suitable for spicy foods. Pairs well with poultry, especially duck, and certain cheeses, such as goat cheese, are perfect as appetizers.

TASTING NOTES:

A soft, fine, and elegant wine, yet with wild reminiscences as suggested by its name. It features a mix of aromas influenced by the Mediterranean climate on ripe grapes, such as broom and a touch of boxwood, along with aromas from its vinification, like citrus notes of pineapple, passion fruit, and grapefruit. As the wine evolves, it develops an elegant minerality that complements the citrus descriptors. On the palate, with short lees aging, it is lightly unctuous, softening its acidity, providing a well-balanced sensation of freshness, and offering a long and persistent finish.
