VINIFICATION:
After a pre-fermentative cold maceration, alcoholic fermentation is carried out with our native yeast, isolated from our own vineyard. After fermentation, the wine rests for the necessary time, is stabilized, and finally bottled.
TASTING NOTES:
In the 2024 vintage, aromas of stone white fruits such as peach and apricot stand out, accompanied by fresh and delicate notes of apple and ripe citrus like lemon, finishing with subtle hints of aromatic herbs and pineapple.
This vintage, with excellent ripening, is reflected in surprising vigor and texture on the palate without losing its characteristic freshness. Its creaminess and perfect acidity result in a luscious, lively, and fleshy wine. The retronasal experience is broad with white and citrus fruit, ending with a very persistent and fresh finish.
WINEMAKER’S COMMENTS:
We do not believe it is necessary to decant this wine.
Aging / Maturation Potential: The wine should be consumed young. Aging is not recommended.
Optimal Serving Temperature: Between 10°C and 12°C.
FOOD PAIRING:
A wonderful match with seafood: oysters, clams, and crabs.
